Yesterday I tried out Chris G's Competition Rib recipe located here and it was really, really good. Perhaps just a bit too done for my tastes. Maybe next time I'll shorten the cook just a bit, but overall they were very good.
I'd like to recreate that recipe with spare ribs instead of baby backs. What time adjustments should be made for the spare ribs?
