So i am taking the plunge and trying out the herb crusted rib roast this afternoon. I only have the BBQrs Delight pellets as smoke wood available currently. and a couple of questions for the veterans:

1) How many pouches should I use?
2) Would the Jack Daniels pellets be to strong?

1) I'd use 2--1/3 c each.

2) Probably not, but I'd go with 1 JD and 1 fruit wood or 2 fruit wood were it me.

I like your approach Dave...but I am more of a Maker's guy when it comes to a cheap drink....

Yep, When I use pellets I use 1/3 rd cup per foil pouch. Ans 2 of those would be perfect for your rib roast. I add one on top of some lit coals, then wait about 45 min to a hour. Use tongs to pull the old pouch out through the access door and put a new one in.
