Hi Dale,
I would save the Hickory for another day if I were you. That's a little too much smoke flavor on poultry for my taste. I might suggest three parts Cherry to one part Oak. If you have fist sized pieces, I would go with three Cherrys to one Oak for the two birds you mentioned in the other post.
