I liked Chipotle but don’t eat there anymore. I had a Chipotle knock off recipe in my list for a while and with a nice-weather Sunday today I figured it was time to try it. Not many pictures, but the chicken was served over cilantro rice and Mexican black beans. My goodness this was good. Next time I’ll take more pictures. Overall it was a pretty easy meal.

Sorry, I didn't get to this in time for your dinner tonight but here are links. I usually don't use recipes from AllRecipes or Cooking Channel, but these sounded good....and they were. I did soak the peppers overnight but I'm not sure you have to go that long. I halved the rice recipe, but next time I'll make a full batch.

Andy, Chipotle is the Olive Garden of Mexican food, you're not missing anything. I got a burrito from there once. It was too small for the money and only average as far as taste and quality. If you want good Mexican food you have to find a real deal place, they are out there. That being said, you can make a pretty decent burrito or taco at home for a lot less with some experimenting.
One of the reasons I no longer eat at Chipotle is because the last time I did the portion size was much reduced. Plus the whole Chipotle "vibe" was starting to turn me off...but that's a discussion for another day and place.
That being said...the chicken in Michael's post is a might fine substitute.

I have over a half dozen from the Canadian border down to well in to Baja I use.
My one experience at Olive Garden was all I could handle so I don’t see me going to Chipotle any time soon.
