Chipotle BBQ Sauce II

I didn't want to hijack Paul K's thread for a similar recipe, but wanted to add the sauce that we used for Smoke Day V.

Spicy Chipotle BBQ Sauce

Ingredients:

2 tablespoons oil
1/2 of a large onion, diced
3 cloves garlic, diced
1/4 cup brown sugar
1/2 teaspoon ground mustard
1/2 teaspoon celery salt
1/2 teaspoon black pepper
2 cups ketchup
1 bottle of Alaskan Amber Ale (for those not in the NW, it's a malty ale with light finishing hops)
2-5 chipotle peppers (canned in adobo sauce), chopped ***
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce


Preparation:
Heat oil in a medium sauce pan. Add onions and garlic. Sweat until soft. Stir in brown sugar, celery salt mustard, and black pepper. Add remaining ingredients. Sauce will be very thin. Simmer, stirring regularly, over medium heat until the sauce thickens. When sauce is close to the desired thickness, remove from heat and hit it with the stick blender until smooth.

***(2 is a smoky, tangy medium temperature for everyone, 5 will only be eaten by those that like HOT) Do as your tastebuds desire.

This is the perfect accompaniment to smoked brisket or grilled chicken.
