My wife wanted to have something a bit lighter last night so we did a salad w/ snappy corn and Chipotle dressing topped with a thin-sliced, local grass-fed sirloin, marinaded in a homemade Adobo sauce. Let's just say this one lit us up! The steak was super tender and I think the belief that grass-fed beef is tough can be thrown out the window. It just requires a bit more attention when cooking, as well as shorter grilling times.
Cake topped w/ Cool Whip and mixed berries for dessert. It was a perfect summertime meal, IMHO.
