Chimichurri Chicken

The recent Williams Sonoma catalog has this recipe. Since I was doing chicken anyway...

Grill Roasted Chicken with Chimichurri Rojo

3 TBS Paprika
1/4 tsp cayenne pepper
2 TBS minced garlic
4 tsp cumin
3 TBS red wine vinegar
5 TBS Extra Virgin Olive Oil
Salt and Pepper to taste

Rub bird and roast beer can style. Don't know how it's going to turn out, but it smells great. Just got two birds on the WSM about 20 minutes ago - One with Chris Lily rub and one with this chimichurri. I'll post more later.
 
Verdict: It's good, but I would definitely make extra to apply after cooking, or marinate in the chimichurri for a few hours.
