It's raining. Look out your window.
If I wanted to do a couple butts using your method, and started at 9:00 pm, lots-o-coal and 20-40 briqs of lit; how late will I stay up to get the cooker smoking? Midnight is not an option.
Do I start earlier or add more lit at the beginning? I want to be in bed no later than 11:00. Get up at 5:00 draggin booty.
Should I start at 6 pm and pull the meat before work?
If I do, will the meat stay in the cooler for 10 hours before I get home? Or do I throw it in the fridge?
Damn it Jim...... I'm a doctor, not a miracle worker.

You still have time to start by 9pm, can start with half a chimney of burning coals. Add wood for smoke and the butts, should stablize in about an hour.
You can't keep cooked meat in a dry cooler for 10 hour so into frig it must go.
