Chilli Powder

My recipe calls for Chili powder. But I know have a pantry filled with fancy chili-powders--ancho, new mexico, cascabel, allepo...can any of these substitute for "chili powder" in a recipe or should I mix them or just use the store bought Chili powder...?

Thanks,
Andrew

chili powder is just a mix of chili's with aditions such as oregano, salt pepper, paprika and the like. You can build a simple substitution using the raw ingredients.

Chili powder is just ground chilis, nothing else. If you're making chili, then you add chili powder and all the other stuff that goes with it separate.

Chili is a stew; a chile is a pepper. So, chile powder is just ground chile peppers.

True. And chili powder is a blend of chile powder, salt, and other items as noted upthread, used in making chili--and for other things.
