Chilean Sea Bass

So the Ninja will be doing some gorgeous Chilean Sea Bass filets tonight. I may include a bit of pellets smoke on them as well. Simple marinade. EVOO, S&P, and will likely move that to the Mediterranean side with some lemon and herbs as well
 
CSB is kinda fatty and rich tasting. It does well with fresh acid when served (fresh lemon or lime). We like it over JD lump or CI seared with clarified butter and fresh lemon on serving. CSB is one of the nicer white flesh fish for dinner. It can be too rich though on larger pieces. Note, it takes an excellent sear in a CI so you get that distinct texture of hard crisp outside and tender, flaked inside when cooked correctly.

The fresh Costco pieces are good. I’ve never bought their frozen bag of pieces tho. Just the Indy shrink wrap pieces.
I didn't know they had it frozen. I did buy a bag of their fresh IQF cod filets and I have to say they're excellent. Makes a nice quick change of pace meal to thaw one or two for the CEO and myself and do a quick pan sauté, make a quick pan sauce some wine sliced shrooms, touch of butter and parsley
