Had anyone else every bbq a chicked on the WSM, pulled it, and made enchiladas? I did this last night, with a nice enchilada sauce I made, used maple wood, and my wife and I were most impressed. I used a combo of like oregano/cumin/cayenne/s and p for the rub.
 
Dennis, I was going to post a couple of links, but there are quite a few references to pulled chicken. So, f you'll do a search for "pulled chicken" you'll find some good information here.

Also, if you are a member of Cook's Illustrated, I'm pretty sure they had an article about it too, using chicken thighs.
