Happy Sunday from sunny New Jersey!
Have my wife's family over - and don't want to screw this up.
Making three racks of BB ribs and one chicken - parts cut up. Full chamber of charcoal, Minion method, water pan 1/2 full, using apple and pear wood.
Figure ribs will go 5 hours or so at 250-275. I have only done chicken at high temps, so I am figuring at 250-275, the chicken parts will need 2-3 hours - and then I'll crisp the skin directly over coals at the end (paying close attention, I know).
Any other suggestions?
