I'm going to do some chicken halves this weekend, and wanted to try out the Goya Mojo Criolla as a brine/marinade. I KNOW I've seen discussions on it, but I can't find soaking times. In your experience, roughly how long should the little birdlings swim in mojo?

Thanks - Keri C

Overnight should do it. I always use my Foodsaver marinating dish, which can cut it down to a few hours or less, the theory being that air is pulled from the meat during the vacuum process, and, when the vacuum is released, marinade is pulled back into the meat. Probably not scientific, but it sounds good...

Chicken halves would never fit in such a dish, though. Large ziplock bags with the air pressed out should do well.
