Hey All,
Found some bone-in chicken breasts in the fridge and a Bob Evans sausage roll, so how about dinner in abit more than an hour on the WSM.
You can do this via high heat no water pan direct over coals cooking. After a full chimney of charcoal with some old coals left over from the previous cook tossed on top, the WSM went to 375 dome temp in about 15 minutes.
I rubbed the chicken with Old Bay seasoning which is a Maryland speciality. Hey I live on the Eastern Shore so you gotta go local. Let rest in the fridge for a few hours to dry the skin out a bit and tossed on the WSM.
Final result yummy. If you haven't had chicken over direct coals on the WSM you should try it. No flare ups, just good ole bbq chicken.
