Chic parm with cheesy garlic bread

It’s storming like crazy right now. Rain is going sideways.

So the grilled chicken became parmigiana chicken.

Homemade breadcrumbs (from panko) which I seasoned myself.

Butterflied the breasts real thin so I didn’t have to pound them. Cooked off in some evoo.

Whipped up a quick sauce from Cento purée. Grated my mozz with a hand grater.

Then off the the races!
