Smoked some beef short ribs today - sauced at 180 internal with the maverick 732. They seemed a bit chewy. Undercooked? What went wrong?
 
While I have not done beef short ribs, it sounds like you pulled them before they were tender. 180 means they are well done but doesnt mean they are tender
 
My experience with beef ribs is that they are different than baby backs and St Louis ribs. Mine never seem to be as tender. My first guess though is that cooking them longer may have helped. Also maybe having finished them in foil to keep them from drying out as they cooked till tender.
Try some things and let us know how it goes.
