Well , I had planned to do a roast beef on the WSM just to have some cold cut RB for Xmas day lunch , but because I dawdled about getting to the market , I got shut out on anything but high end beef roasts.
I should have shopped early and gotten something that was on sale in the run up to Xmas . Oh well , live and learn.
Soooooo , I looked around at the alternatives and found some decent looking beef ribs that were priced to sell and I got a couple packages.

I seasoned one rack with Montreal steak and the other two I put in a bag with some yoshidas teriyaki . After a quick marinade I sprinkled them with my basic rub and then dusted them with Chinese 5 spice. I am hoping this is a pleasant combination.

I'm smoking them as I write this. I'm doing a basic 3-2-1 smoke on these. I will post some more pics as the day goes on. Hope you are all having a nice Xmas eve day.

Finished product: pretty tasty...maybe ease up on the salt next time.
