We have been approached by some friends who enjoy our BBQ to cater a livestock auction they are hosting at their farm. There would be right at 150 people there. We haven't said yes yet, because we want to be sure we can handle this. We are not caterers by trade, but have enjoyed doing a few special things for friends. This is by far the largest thing we have considered. How much brisket will it take to feed these people? We have 2 Weber Smoky Mountains that we cook on. Can we prepare some of this in advance and freeze it? We will also provide baked beans and slaw with the brisket. Any guidance on quantities and preparation tips will be appreciated.
