Cashew Butter

We have tons of raw unsalted cashews so instead of the typical peanut butter, I would like to make some cashew butter. Anybody have any good recipes? I am thinking just throw it in the food processor with some salt. Since cashews already have a lot of oil, should any be added? Thanks.

Yes, in a processor you'll need a little oil. Figure 1.5-@ T per cup of nuts. Go with 2-3 cups of nuts (easier when there is more) and the lower amount of oil. If the the butter starts to bind add a little more oil. A little salt. Some add sugar but I'm not a fan of that.
 
Erik, Here's Alton Brown recipe for cashew butter.

Cashew Butter:
2 tablespoons honey
1/3 cup walnut oil
10 ounces (approximately 2 cups) roasted cashews
1/2 teaspoon salt

Place the honey in a microwave-safe container and heat in the microwave for 15 seconds. Remove from the microwave and add the oil to the container. Place the nuts and salt in the bowl of a food processor and pulse for 5 seconds. Then, while the processor is running, very slowly drizzle in the honey and oil. Process until an emulsion is formed and the mixture is smooth; this will take approximately 45 seconds to 1 minute. If the mixture is too thick and doesn't spread easily, add a little more oil.
Yield: Approximately 1 to 1 1/2 cups
 
Thanks for the help guys. Do you guys think I'll have any issues using a blender (Vitamix) opposed to a food processor. The last thing I want to do is burn the motor.

I have used the same Vita-mix for over 20 years for nut butters. Do not go slow. You want to go from slow to the higherst speed in maybe 3 seconds tops. If you have a turbo switch that's the last thing you hit when you hit the top spered on the dial. You'll overheat the machine if you go slow with it.
 
Well, I just finished making it. I still don't understand why oil needed to be added Kevin so I omitted it. I used half roasted salted cashews, and half raw unsalted cashews. The consistency using the Vita-mix was absolutely perfect, very smooth (I wish I had a digital camera to post). I highly recommend making your own nut butters, a completely different taste compared to store bought.

Kevin, one last thing. How long do you expect the cashew butter to last refrigerated? I imagine a few weeks. Thanks again.
