In another forum post, someone made an incorrect reference to Caribbean brisket when they meant Hawaiian. That got me to thinking and I found this recipe for Caribbean Smoked Ribs (specifically the spice rub). The recipe suggests 1 pound of wood chips (no specific type) but I would just do it the 'normal' way that you do ribs.
This recipe is said to make enough for 4 side racks. Your mileage may vary.
NOTE: I have not tried it but oh it looks so good I thought I'd post it here.
Caribbean Spice Rub
2 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon chili powder
½ tablespoon thyme
½ tablespoon oregano
½ tablespoon cumin
½ tablespoon black pepper
½ tablespoon onion powder
½ tablespoon cayenne pepper
