Caribbean Holiday Shrimp

Now you can buy cooked shrimp, so this is a great recipe for hot summer days, NO COOKING!!!!!!

Caribbean Holiday Shrimp

1 TB. vegetable oil
2 TB. minced fresh ginger root
2 limes, juiced
2 cloves crushed garlic
1 TB. soy sauce
1/2 tsp. white sugar
1/2 tsp. crushed red pepper flakes

2 lbs. medium shrimp, peeled, deveined and cooked
1/2 cup chopped fresh cilantro

In a large bowl, combine first 7 ingredients. Mix well. Add shrimp and cilantro and toss until the shrimp is well coated. Cover and refrigerate for at least 1 hour or up to 4 hours. Stir occasionally while chilling.
