"Caprese" Pasta

Not sure what to call this dish, but it is delicioso! Spinach subs in for basil, but close to caprese. Melinda marinated cherry tomatoes in balsamic vinagrette for 2 days. She did the same with halved chicken breasts. 2 days seems like a long "marinade" time, but for something like this it's perfect. We've been eating the tomatoes on crustini with fresh mozzarella. We stepped it up the other day, and I grilled the chicken for a delicious pasta dish. There's plenty for everyone. Enjoy!

EVOO and minced garlic to sautee spinach. Bowtie pasta boiled. Chicken chopped, and it all gets combined over heat for a few minutes with grated parmesan cheese mixed in. Sweet tomatoes, crispy/moist chicken, a bite of garlic in the spinach....perfect flavor compliments.
