What unique way do you enjoy it?

I have two:

fresh cantelope and orange curcao...wonderful

fresh cantelope and dairy (cottage cheese or yogurt) and tonight I added a third ingredient.......fresh diced jalapeno !!! Yum
 
Fresh can te lope with some sea salt, that's it for me. I'm easy.

Now the jalapeno sounds like an intresting addition. I will have to try that sometime.

Usually I will cube it up in about 1" sizes, and get it as ice cold as I can, then drizzle a bit of pure maple syrup or honey on top of it.

Add some ice and tequila and throw it in a blender and you have yourself a cantelope margarita.

Prosciutto con melone.....sliced cantalope wrapped with prosciutto with dots of very high end balsamic....outstanding.

Dude, I have no idea how to spell it, I just posted on how I say it. I don't say it as one word, It comes out of my mouth as 3 words hence the Can - Te - Lope.

Pretty much the same for me. Occasionally wrapped with some prosciutto. I've done the cottage cheese thing as well and like it.
 
Sometimes combining fresh herbs with fruit adds a twist. Try any of these to some fresh fruit:
Basil, thyme, ginger, cilantro.

Not sure if anyone saw the Food Network Special "Ultimate Recipe Showdown" episode where the contestant made a Turkey Burger with Can - Tee - Lope (instead of Tomato) along with prosciutto, instead of Bacon? The Judges said it worked very well.

Bryan,

When I cannot get good tomatoes (like the Jersey shore ones) I have used raosted red peppers in lieu of tomatoes. Works fine on any kind of burgers. You can even use the peppers that are in a jar.
