Can I Freeze This?

Hi - trying to work ahead a bit. I want to make up an AB coconut cake for Christmas dinner desert and would like to have the coconut ingredients made up ahead of time. I have frozen raw coconut before and can't say I noticed any negative affects. Wondering if this coconut cream and milk ingredients would freeze (vac sealed) ok without issue. I would think they would be fine. I have frozen whole milk before without negative effects. I've already made up the extract and the only problem there will be drinking it before Christmas

Yes, but what I'd do is wait to strain. You're going to have to re-blend anyway after thawing so do the blending and then, instead of straining next, freeze the whole thing. Repeat with the cream. For use, thaw then re-blend in your blender for 15-20 secs, then strain out the solids.
 
Thanks Kevin. Coconut for the frosting I was going to leave whole and shred the day of. Any advantage to that? Or OK to shred now and vac until ready to start? I'm thinking the frosting won't freeze well so thought I would make that up the day I bake - same with the cake itself.

Less processing and additives, lighter and a little more subtle. More "natural" in flavor

Some use thickening agents, flavorings, sweeteners, etc. I cannot get quality canned coconut milk at home but I can almoat always get quality coconuts so I make it. I always grate with a coconut grater though; longer shreds I prefer.
 
Funny you mention the coconut grater. I do get nice long shreds with the processor but they are not real thin shavings. Fine for making the milk and cream. Thinking of picking one up for the icing and cake itself though since I want that to be a little thinner. Thing is the graters I've seen are really for working with coconut halves. I already have the meat removed, so this time I'll continue to use the fine shaving/grating tool.
 
Yeah the pieces are pretty large for the most part. I started with 4 coconuts so I will have plenty. Cream, milk, water, and coconut hunks are all measured, vac sealed and in the freezer this morning. I'll let the extract work for a week then strain. Man, it's really tempting to hit that coconut flavored Kettle.

Kevin, they are actually the set of tools I was looking at. Next time around I'll have a set of those.
 
Just want to give a heads up. If you love coconut and have been looking for a real coconut cake recipe this is the one.

This was the desert after the prime rib Christmas dinner. I am still getting positive comments on how good this was. This is a great recipe albeit time consuming. I found it fun to make though.

Simply fantastic!! Highly recommend you give this a try.
