Butts for party Sat night- Need advice

I have been volunteered by my wife to make pulled pork as the main dish for a church gathering Sat night. The only issue is that I have to work all day tomorrow.

So, my question is this. If I get the butts (doing 2) going at 10 or 10:30 tonight- -can I pull them off at 8AM tomorrow, foil them- -and put them in the oven on 250 to finish them off? My wife can take them out when the therm says they are 195-200, and can rewrap them and put them in a cooler.
Will they have gotten enough smoke by then? My reputation has gotten some of these folks excited, and I don't want to disappoint.

Secondly. One of the folks is from TX, and I was kicking around the idea of a brisket (smaller one) on the second grate with the butt. What are the options of finishing it off in the oven?

If the brisket doesn't finish in the cooker you can finish it in the oven. Unlike butt, with its wider window of done, brisket can overcook more easily--i.e., sooner--but wrapping the brisket in foil (recommended) will give you more leeway.
 
My opinion is that if you start the Butts at 10 or so tonight and you can keep the temps around 250 I think you will be fine to pull them off and pop in the oven at 250 until they finish/reach about 200 deg. Foiled in a towel filled cooler let them sit until they drop to about 140 deg. The will pull just fine by hand.

They will have plenty of smoke cooking overnight.

Kevin- -when you said foil the brisket-- how soon do you mean to do that? Sometime over night, or is in the morning acceptable?

Normally, in the smoker, when it reaches ~165, give or take a few. But if the brisket is small I'd suggest putting it in as late as possible though. Then, early in the a.m. and irrespective of its internal, you can foil it and put it in the oven with the butts.
 
Much to do about nothing. Just got back from Costco-- butts, CHECK. Brisket? NOPE. They didn't have any out, and with them closing within the hour- the butchers had all left for the day. Oh well, looks like it will be PP for everyone. still good, though.
