Butt + WSM + Minion = perfection

Put 4 butts on at 7 PM last night. Used the minion method of firing. Had 8 hours of sleep. 13.5 hours later, I still have a nice steady 250 degrees just like when I started. I have an internal reading of 170 right now, I've wrapped them in foil. Another couple of hours and LUNCH mm good !

Personally I think the 170 and maybe even the 190 temps are way too low. I went all the way to 217 and the meat was moist AND there was almost NO fat left. I mean nothing, no grease even. But the rendering of the fat had left the meat moist as you would want. And pulling the meat was effortless and almost clean!
 
I agree that 170?F is a bit low but anything above 212?F is boiling; I'm not sure I would want that, either. I always suggest 185?F for slicing and 195?F to 205?F for pulling. I never use foil, while cooking butts, as it makes the bark soft and moist and changes the texture of the meat.
