Butt up brisket down question…

Hi all

When doing a butt or 2 on top and brisket on the bottom .would you smoke the brisket fat up or fat down ?
I do not like allot of visible fat

Try fat side down for the first half or so of the smoke, then flip to fat side up. It will help protect the leaner side of the brisket. I know of a number of cooks that have taken to cooking fat side down for the entire cook, removing the fat after the brisket is done.
