Anyone ever cut up a butt into chunks before smoking it like the chuck roast recipe on the main page for pulled beef? I have made pulled beef alot and love it, probably more so than pulled pork but was just wondering about trying something similar with a large butt.

My plan is to cut the butt into roughly 6 equal size pieces, remove the bone, place the meat in a foil pan and smoke at 275 or so until tender. Anyone ever try this method? May even foil the whole thing after a few hours to speed things up. Thoughts? Thanks!

This will have some effects, though. Cook time will be quicker. You will get more smoke flavor adhesion to the meat since there is more surface area. You may want to cut the heat back to 225 or 250*

Many recipes for carnitas (mexican version of pulled pork) seem to use this approach.


I would leave the bone in. When roasting, the bone exudes lots of flavors into the meat. Why waste that? Plus, it is a perfect timer. If the bone pulls away clean and dry, the pork is done.
 
Also, With greater surface area you'll impart more of your rub into the meat. This may be good or bad. Usually people like more bark but if you have a spicy rub it may be spicier than normal.
 
I prefer butts whole but it's worth a shot if you like. You could also just use Country style ribs when on sale.

Country style ribs (shoulder, not loin) is the Boston Butt, cut into strips.

They are good. When I've done them, I've taken then off a little less done than a whole Butt I'm pulling. They are very good. Use the same rub you would for a butt, but with less seasoning (as you have a higher surface area to volume ratio).
 
Thanks for the thoughts guys. Gonna give it a try. The reason I said I was going to remove the bone was because I didn't figure i could cut the butt into chunks without taking the bone out. I have done this before with a couple small loin roasts (I think that is what they were called - no bones and probably 3-4 lbs) and it turned out well. Appreciate all the thoughts and suggestions fellas!!
