I have an 8lb butt, 7 lb boneless pork loin to cook on my WSM.
Want to serve about 10 people around noon Monday, (Labor Day). How would you do this cook on the wsm to serve at noon or 1 pm.

For the butt, figure 1 to 1 1/2 hours per pound at 225 at the grate, I'd get it on the cooker around 10 pm tonight then you can just foil it and let it rest for awhile before pulling it at 12.

Not sure with the pork loin, you only need to cook it to about 150 internal, they are lean cuts of meat and don't benefit from cooking to higher temps like the butt you have. There are a variety of receipes for pork loin around the site.
