Just wondering if I'm fitting 7 racks of baby backs on one rack and I want to do 2 pork butts at the same time, which rack should the butts be on ? The upper or the lower. Keeping in mind that the butts have more fat to drip off but have to cook longer, which would you recommend ???

As always, thank you so much for your kind attention,

Marc

Hi Marc, I think I'd start the butts on top, then when you figure you want the ribs in six hours do a flip and turn the butts to the bottom and put the ribs on top. By then the butts should be well along and the ribs will help baste 'em. If you remove the top grate and put the lid back on the cooker when you move the butts you can arange the ribs on the grate and try to minimize heat loss and recovery time. Hope this helps and I'm sure there are gonna be a few opinions. You gonna go with water or sand?
