Going to smoke a pork butt using Cherry wood on saturday. Never used cherry wood before, any tips/pointers appreciated. Any thing I should keep in mind for the Rub ingredients ? Thanks John
I love the cherry wood. I have some chips, but no chunks. Cannot find any around here. Online the shipping costs more than the wood!, the ones i linked to. Put in hd foil and stick holes in the foil and lay on top of the briqs.
I also mix some hickory chunks in the charcoal ring.
I use cherry in pretty much everything except fish. It's got a sweetish smoke like apple. I have a lot of both cherry and apple -- I had to cut down a cherry tree about a year and a half ago, and my neighbor has a big old apple gone wild that lost a big limb last year.

how was that? i have a few chunks of cherry left that i was going to mix with a few chunks of pecan for sundays butt smoke.
