Burning Winter from My WSM - Tips?

Hi All,

I'm in Toronto and we're supposed to have a nice weekend so I want to break out the WSM. I'd like to do a high heat burn to clean out the gunk then finish with a few HH chickens. I don't think there should be any issue following the burn with a cook but can anyone comment?

Also, for my burn, I'm planning on laying down a mix of leftover lump and briqs and adding a full chimney of hot lit to try and get the 18" as hot as I can with all vents open for an hour or so then proceeding with the cook. Any suggestions for the burn would be appreciated.

Any overall tips would be great too.

Hey Jim not sure what you are trying to accomplish? WSMs really don't need to be burned off like gasers. They are not even designed for HH unless you modify them a bit like adding a second dome vent. If you really think it's necessary crack the lid or open the fuel door a bit from the bottom, no water pan and use plenty of R/O lump. Keep it out of the wind and let'er go.
 
Thanks Gary. I left my smoker a little wet before putting it aside in the fall so I want to burn off anything that may have grown since. During smoke season, I'm not worried about the gunk.

As far as HH, I like my chicken crispy, so I cook as high as I can get (375F to maybe 400F on a hot, sunny day). The WSM may be made for low and slow but I've followed many a butt with a HH chicken while the pork is resting.
