Butt has cured for 10 days, now I understand that it should be rinsed in cold water and soaked for two hours with one or two water changes. Do I use ice water?
After soaking it should smoke at 200* till it reaches 140* internal temp.
I do Not have instructions....thanks for the help
 
Ice water isn't absolutely necessary. Using cold tap water ought to be sufficient. Throwing some cubes in won't hurt if you wish to err on the side of caution.

After 10 days in the cure, the butt is now a pretty inhospitable place for nasty microbes to develop.

The smoking instructions you cited are correct.
