Brown Sugar Rub Salmon

I am going to follow the Recipie from the board and cook Brown sugar rub salmon tonight. My question is has any one vaccumm sealed their salmon after smoking it? I want to give a lot a way to friends.

Yes. Let it cool a bit. Stick it on a wax paper- or parchment-lined pan, drape a piece of Saran over it (not tight, just lay it over), and stick the pan in the freezer. Allow the fish to firm up well (if not freeze), then pack and vac. You can vac direct if you wish but I find that firming or freezing first maintains its structure better during the vac process.
 
I semi-froze it so the vacum wouldn't crush it...worked and tasted great!
