I was wondering what the recommended final
internal temperature should be on the ribs prior
to removal from the smoker. I use a polder
probe.

Ribs are somewhat difficult to use a polder probe, so most use the tear test. Grab 2 bones and apply light pressure, if the ribs tear apart easily, you're done. If not, keep smokin'.

If you are able to get the polder in a good place, 185 - 195 is average for doneness, the higher the temp, the more easily it will fall apart.
