OK, I finally did the BRITU! All I can say is WOW! I asked my wife what she wanted for Mothers' Day and all she said was Ribs. I followed the recipe w/ a few exceptions. I used my own rub, I fired up the Weber Smoker as per directions and used 6 chunks of Hickory and several handfuls of Apple chips. I cooked 5 slabs of Baby Backs rolled and skewered as per the directions. The fire was at the same temps as the instructions. At 3 hours I turned the ribs and applied the sauce mix-my own, and pulled the ribs off at 4 1/2 hours.
There was a nice pink color and great bark. Every one loved the ribs, especially my wife. My only complaint was that the meat was a bit dry. Great smoked flavor, but a bit dry.
What can I do the next time to make them more moist. Sorry for the long post, but appreciate any input.
