I'm sure it has been asked and posted else where but I'd like to get a post or two going in here.

I'd like to smoke a brisket but I'm not sure what to look for in the brisket when I'm examining them before the purchase? Any thoughts or ideas?

Look for whole brisket will run 10 to 12 pounds on average. The flat or narrow end should be even thickness across that end.
The fat cap should cover completely, on the other side take a look and see if there is any marbling. Place the center of the brisket in your hand and if it droops on both ends, that is a good sign.
