So did a brisket rather tha ribs for smoke day and went fantastic (also first go with Kingsford after two cooks with Natures Grilling hardwood briquettes). Now my question. Seems all the brisket I have access to are trimmed flats (6lb.-7lb.). It took 78 min./ lb. to cook this one at 6.75lbs. If I was to cook two at this size for more people, how much extra cook time should I allow? Will my cook time double? I used 3 mesquite and 2 alder pieces for one brisket, would you add more wood? Thanks eveyone for a great site.
 
It will take the same amount of time. It is possible there would be a slight increase in time to hit your target cooktemp due to the additional cold mass (the second flat) in the cooker but that would be the only operative variable.

I would not add more wood. There should be no need.
 
Kevin gave you good information.
Additionally, if you're cooking on both grates, it is possible that one may finish before the other. This can vary depending on how and what you use for a heat sink.
