Brisket Size?

Costco has brisket flats in cryovac that weight just under 5 lbs. Does size matter when it comes to brisket? Do you prefer
a. big
b. small
c. doesn't matter

You'll need to keep a closer eye on a small flat, and disregard time estimates of hours per pound typical when cooking a larger cut.
 
Size does matter! With small trimmed one like that, you will moist likely have to foil it during the the cook, otherwise it will dry out on ya.

As far as brisket size goes, I like to get a medium sized untrimmed packer. Like 8-10 lbs. If you get a really big packer it most likely came from an old, tough cow, and no matter how long you cook it you ain't gonna get it tender. I do trim some of the fat off the untrimmed briskets but I try to leave about a 1/4 inch or so on it.
