Brisket .. saving for the next day?

First brisket comes off in 10 min. If I want to save a portion for tomorrow should I slice, shred, chop today or wait until tomorrow? I always shred my pork butts 30 min after comming off the smoker, and save. Is it the same for a brisket? /infopop/emoticons/icon_confused.gif
 
I did two briskets last sunday.Had some with the
family that night and put the rest(15lbs.)in
ziplock freezer bags and have been eating off them
all week,I like to slice thin for sandwiches,and
keep the bags in the fridge.The taste seems to
just get better.
