How long will a brisket stay good in cryovac when kept in the fridge? How long will it stay good in cryovac if frozen?

Is there a sell- or freeze-by date? Properly frozen, if the packaging is uncompromised, it should keep a year or so, with little deterioration in quality. The briskets I purchase from Sam's typically have a sell-by date 10 days to 2 weeks out.

The got ya is what temp is your fridge and freezer? The fridge needs to be as close to 32*f as possible. 40*f is "safe" but not for very long. The freezer needs to bu minus -20*f or lower.

@ 32*f Brisket will go 30 days from the pack date on the case (not the sell by.)
@ -20*f or lower I've gone 6 month's and don't see why a year is out of the question.
