Brisket from sams in fridge with use by date of march 7th ??

Well I have been meaning to make pastrami for over a month now and finally was getting around to it and realize the date on the 3.5 lb flat I bought from Sams says use by March 7th.

Use it or lose it

now the dates that sams puts on their meat usually have no correlation to the date on the box from the packer and its beef not pork.

From my previous thread regarding this kind of transgression I'm inclined to use it but wanted to solicit some opinions.

Open it and rinse off the blood. See if it still smells in 30 minutes. You might have a very tender piece of wet-aged meat.
 
Use-by/sell-by dates on pork and beef don't necessarily mean much.

You can rinse if you wish (I don't bother; and the juice in the package isn't blood, btw); I just drain, pat dry and air for a bit before rubbing and cooking.
 
Like the others, I'd open it up, let it sit for a few minutes to let the cryo funk leave and then see if it smells bad. Wild guess is you'll have a nice aged piece of brisket.
