near impossiblle to find a packer in north Jersey but I thought I finally found a place. cooked my first whole brisket the other day, or so i thought.

Bought what was labeled C.C. 1st & 2nd cut. 10 lbs.

Yet after opening and trimming some hard fat there wasn't a noticeable point. Only a very large flat which included extra meat on the side. Whole cut shaped like a palm with a big thumb adjacent to it.

What does "C.C. 1st and 2nd cut" mean ?

1st and 2nd cut means flat and point, respectively. C.C. means center cut. The 'usual' name for this cut (not that there is much 'usual' about retail meat packaging and nomenclature) is 'middle cut'. In this case (I'd have to see a pic to be sure), the brisket comprises both flat and point but the sides (and sometimes the point's crown) is trimmed off.

thx..I will take a pic next time. aside from not having a noticeable point there was that extra piece off to the side...prob about a pound.
