Brisket: About an hour a pound?

Hi,

It's almost show time. (Maybe I'm getting a little nervous).

What do you guys think? About an hour a pound at 225 to 235?
 
Robo, 1 - 1.5 hrs a lb has been my mileage. YMMV 225 - 235 is good. I try to do all mine at 225

I'd think 1 1/2 - 2 hrs. per pound is more like it. If you have to pull it off earlier because it's done, it will sit well in foil.

Unfortunatly I won't be around to help you eat it at 1:00, I have to go see my daughter at school this weekend. Enjoy it without me. lol

12-15 lb packers usually take me on the order of 12 hours or so. I've also not been too afraid to foil for the last hour or so, with some beef broth, a little more rub.

I've been pulling mine between 185 and 190, holding for a couple hours. Seems to me that 2 hours / lb is a bit on the high side, but that's just me.

I'm sure it'll be great.
