I have never smoked fish before but I go out all the time fishing and catch a lot of bluefish. Do any of you have a good recipe for Bluefish? I need a good brine to use and how long do I soak the bluefish in the brine for before smoking? How long should I smoke Bluefish for at say 225-250?

Thanks.

Steve,

I've never smoked bluefish, but from what I understand, it is a somewhat oily fish, so I would recommend you follow the guidelines on this forum for salmon. As far as time, if the fish is indeed oily, then you could go for the traditional shorter time (all based on temp and size of fillets) or the longer time which would produce the dryer 'appetizer' style.

Hi Steve,

I haven't tried this but I did bookmark it for an attempt at some point.

Might be a good jumping off point,
