Brat Bites?

We've got a really good brat place by us and I like to cook them year round. Typically indirect with a bit of smoke then sear at the end to crisp up. But I want toturn these into an appetizer for a large xmas party. Im thinking cook them the exact same way, then slice into bite size pieces then throw into a crock pot with caramelized onions to keep warm/ serve.
Im guessing it wont be great as far as presentation but should still taste amazing. Anyone done this or have any tips?
