Just wanted to show you a few pictures of a Boston butt I prepared last night to smoke today. I'll give you a run down of what I have going on, it's boneless, I know. I thought I grabbed a bone in, but was paying more attention to the weight and what it looked like until I got it home. I did not do any injecting on this one, I want to see what kind of flavors I can get with just the smoke and the dry rub and let the pork taste shine through. Also I tied it up for the first time, I didn't do that on the last one which was my first ever if you remember. I am smoking it with about 30% Hickory and 70% Cherry wood. I was supposed to put it on around 330-4 this morning but the rain delayed it so I didn't get it on till around 530, not too happy about that but it's not a big deal it should be ready for dinner. It's been hovering around 230-250 so far, I love my Mini WSM.
I am attaching some photos from last night after I rubbed it down and tied it off and then once it was wrapped up, also one of this morning once unwrapped ready to go on and of course one of it just being put on. The photos are in order as well.
I am very excited about this one, I did use simply marvelous sweet seduction rub on this since my cherry rub is all gone already and I have not got the apple rub yet.
I'll get more pictures and updates as it goes along, I'm not 100% sure if I'm going to foil it or not, haven't decided yet.
