saw a show on the travel channel a few days ago about the Carolina's and had this man on there talking bbq and that he has been a judge in contests. He stated cooking the whole hog was just better bbq over cooking a butt or shoulder as the whole hog bubbles in lots of fat from the bacon. I'm wondering if I take a butt and toothpic strips of bacon over the top- if that would give good results.
