Stephen, the only consideration I can think of is "why would you CONSIDER using a boneless rib eye? OMG the bones in a standing rib roast are the best part. Talk about flavor, and not only to the ribs but to the whole roast.

I used this exact recipe at Thanksgiving and had perfect results. Have done it twice since then and people love it. Good luck.
