Boneless Rib Roast

So yesterday I splurged for a big family gathering. One of my nephews, my remaining sister and her husband, my sister in law, my youngest daughter and her BF along with the kids (soon to be 2yo, 3yo, and grandson 14), oldest daughter and my SIL as well.
I bought a 17.5 lb hunk of beefy rib roast primal goodness. Will open the vacuum pack soon and butcher that bad boy into a large center cut roast to go in Big Z tomorrow AM, the plan is to get some freshly picked sweet corn from one of my 2 fav local farms. Those will get roasted in the husk in the Wolf.
Gonna be eatin' good in da neighborhood.
All totaled I'll 14 here. Though 2 will be little ones (toddlers), a non meat eater, a non roast beef eater (don't ask long story :D), so for those who don't want the roast, there'll be home made marinara my sister whipped up, on maybe some penne'
In any case it's gonna be a mad house. Then after all that chaos Monday I get the new car and then all the chaos that will entail getting a 240V line and level 2 charger installed

I trimmed that large primal back to about 12lbs. Got 5 steaks out of that. 3 1.5" thick and 2 1/2" ones. Trimmed the silver skin and hard fat, scored the cap, tied it up, applied binder and my 60/40 S/P mix. In the smoker now at 180. I'll take it close to rare. Run the grill up to maybe 380-390, and let it finish after it's had a good wrapped rest in the cooler for at least an hour.
It's SHOWTIME!
 
Well, apologizing in advance. I had that beauty on Big Z at 180 for a few hours. Raised it for bit just to get it to a edible temp (rare). pulled it and placed in a disposable foil pan, covered in foil nicely crimped. Place the whole shebang into a cooler and wrapped in towels. Rested about 2 hours as we had cocktails and appetizers.
Cranked Big Z to 380. Finished to make the cross hatched top like cracklins. Took about 12 min or so and served. It was nothing short of amazing. Had a very nice crust and perfect edge to edge from first slice to last rosy pink. Even (now relatively skinny me) had 2 slices (where I'm normally only having a half slice since all the weight loss). My brother made a piggy of himself as well as my SIL. All were well sated and a fun time was had. Little Zayla turns 2 on Thursday and my nephew recent birthday boy 28. Wife made a cake. Little ones had a great time. Even my brother's dogs were here and enjoyed themselves. Now I am too pooped to pop :D Tomorrow AM I take deliver of the new car as well. Busy couple days here

I realized I'd forgotten to take photos of the guest of honor too late. I truly thought I'd taken photos as things progressed. Oh well
